Mini Rose Cupcakes – Piping Technique Video Tutorial

I first used this technique when decorating cupcakes as part of a wedding cupcake tower. The bride wanted the cupcakes to look like mini bouquets of roses. I love how these cupcakes look, they are so pretty and delicate, and make a change from a traditional buttercream swirl, and I really wanted to share with you how I did them.

This is the same technique that I have used on giant cupcakes in the past, but instead of using the Wilton 2D piping tip which you use for the larger roses, I used a smaller version which has a closed star end. In this tutorial I show you how I hold my piping bag and the techniques that I use for creating the mini roses and tiny flowers. I really hope you enjoy the video tutorial and also enjoy making your own version of these cupcakes.

Blue Ruffle Cake with a Bag & Shoes

I was asked to create a cake for a joint 30th & 60th birthday party which took place last Saturday. When we first started talking about the cake, they were looking for something that used different shades of blue and had a real feminine feel. They decided on a blue ruffle cake with some shoes and a bag modelled ontop…

The cake itself was a 9inch chocolate cake and I used 4 different shades of icing/ fondant to create the ruffles up the side, going from navy blue at the bottom to white on the top. I then modelled the shoes based on a pair of Louboutins that they really liked. To create the gumpaste shoes I used the same template that I created for my mini shoes tutorial and printed them out bigger so that they looked in proportion to the cake.

The large bag was then created using the same blue gumpaste. I think the bag and shoes went really nicely together, and I loved how this cake turned out. I really hope that the 2 birthday girls had a fantastic birthday.

Gumpaste Hydrangea Video Tutorial

Keeping with the theme of flowers, for this video tutorials I thought I would show you how I create my hydrangea flowers. I love creating hydrangea flowers as I think they look so pretty on their own, or as part of lots of flowers. I usually try and make a variety of shades which I dust with petal dust as I think this makes them look so realistic when their together.

The photo below is an example of the hydrangeas in a bright pink colour placed in a dome of flowers on the top of a wedding cake. I love how they can be used to fill the gaps between larger flowers like the roses and peonies.

Peach Birdcage & Lace Wedding Cake

This summer was full of wedding cakes, and I wanted to go into more detail about the ideas and techniques behind some of the cakes, starting with this 4 tier peach lace birdcage theme wedding cake.

Now this was one of the cakes I was most nervous and excited about, all at the same time, and the reason for this was because it was actually for my Brother and now Sister In-Law’s wedding cake. I was so excited about their wedding and I wanted to create something they would love and that would match their theme and stationery perfectly…

They had a very vintage theme wedding with birdcages, lace and roses all with a peach theme. The cake itself was made up of a 12 inch lemon cake, 10 inch vanilla & chocolate orange ganache cake, an 8 inch fruit cake and a 6 inch birdcage dummy cake on the top. The reason I chose to use a dummy cake on the top was because we were trying to create the height with the cake, but didn’t want too much cake left over, as everyone was going on holiday after the wedding and I would have been left to eat it.

Using the dummy cake worked out really well as I was able to start decorating this before making the rest of the cakes. To create the colour on the birdcage I covered the dummy cake with white icing/fondant and before adding all the details to the birdcage I airbrushed it with peach and apricot Kroma color airbrush colour to create a gradual gradient going down the surface. I then created lengths of round icing using an extruding gun and placed these down and around the birdcage shape to look like the wires. One of my favourite parts about the birdcage was the 3D birds which sat on the outside of the birdcage. These really stood out and brought the whole theme to life.

The lace around the cake was edible lace and I had searched for ages to find a lace mat which I thought looked dainty and realistic. As soon as I saw it I knew it was what I was looking for, the lace mat was the eternity mat by Cake Lace. I coloured the lace mixture in peach before putting it onto the mat and baking it in the oven. I then used a knife to straighten the bottom edge to run along the edge of the cake tier as this design mirrored itself on both edges.

I finished off the cake with gumpaste flowers, including different shades of peach roses, hydrangeas, buds and green leaves. It was a lovely wedding and I was a really proud sister.

Gumpaste Rose Video Tutorial

Whether it is a birthday cake, an anniversary cake or a wedding cake one of my favourite cake decorations to make is a gumpaste rose. They really bring a cake to life, in any colour and any size they add a classic beauty. I love creating gumpaste flowers and my aim is to make them as realistic as I possibly can. Starting from the inside out, the flowers come to life with every new layer of sugar.
