I have loved all the cakes I have made, but this is definately the cake I am most proud of, and the cake that has meant the most to me. On June 20th of this year I got married to Alex at the beautiful Westenhanger Castle, in Hythe, Kent and this was our wedding cake…
It was truly the most daunting task coming up with the design for my own cake as I new everyone would be wondering what I would do. I wanted something very simple and traditional where the gumpaste flowers could really show up and be the main focus, and I wanted something tall. This cake was made up of a 5inch fruit cake on the top, 7inch carrot cake, 9inch lemon cake and 11inch chocolate cake on the bottom and each tier was 5 inches in height. Its really hard to visualise in the photos the real height of the cake.
The flowers were all made out of gumpaste and took quite a few hours. Every time I though there might be enough I was very sadly wrong, as I added more and more flowers to the top spray they would just vanish and the gaps were still there to be filled. The flowers were made up of roses in 3 different shades and different sizes, 1 large David Austin style rose, lilacs, freesia buds and dark purple lithianthus which matched the flowers in my bouquet and around the venue.
It was a true pleasure making this cake, and even though it was only finished 2 days before the big day it wasn’t stressful at all making my own cake, which many people thought it would be. When I stacked the cake at home to see what it actually looked like I was so happy. It was exactly what I had wanted for our big day and quite emotional as Alex and I stood back to take a look, this was our cake, which I had been planning for over a year.
